The joys of fair food

A recipe for “Taco in a Bag”⎯a carnie favourite.

Carnivals are all about fun and frivolity, and not-so-good-for-you food is a big part of that experience. Forget the phrases “glycemic index” and “fat count” for a day and indulge in mini-donuts, funnel cakes, blue cotton candy or “Taco in a Bag”—which is apparently a favourite of carnies. Here’s a recipe to make at home:





Taco in a Bag

1 individual-sized bag of taco chips (per person)
Lean ground beef
Taco seasoning mix
Shredded cheddar cheese
Shredded lettuce, chopped tomatoes, green onions, chopped peppers (or any combination of these)
Sour cream
Salsa

Brown the beef in a pan and drain the fat. Stir in the taco seasonings. (You could also skip this step by using homemade chili.) Leaving the bag closed, smash the taco chips. Open the bag, and scoop in the beef mixture, cheese, vegetables, sour cream and salsa. Stir, then fork it up right from the bag in true carnival style.
